Stephen, a classically trained chef originally from Victoria, he has worked with Roger Verge and Alain Senderens of Europe, as well he has worked in many hotels and restaurants in Australia, including Grand Hyatt Melbourne for 7 years and the Hotel Windsor in Melbourne. In 1995-2000 Stephen and Bernadette Hall opened Peroni restaurant in Melbourne to critical acclaim (See Review), then in 2004 moved to Brisbane and opened Switch Cafe (See Review), the cafe was recently transformed into the now H4 Hospitality.Stephen has been activly involved in the training industy for over 12 years and is still involved in several food related businesses.
My career has taken me around the world with Cirque du Soleil where I was the Chef and Nutritional consultant sourcing new and exciting ingredients and training staff from countries such as the USA, Japan, China and Singapore. I am now a full time Hospitality teacher using my knowledge daily to provide high school students with an insight into the Hospitality industry. As a Chef for 18 years I have discovered that the most valuable career building asset to have is the ability to be open to new tastes and techniques and then add these to your cooking repertoire as the times change. It is this readiness to adapt and to be thirsty to remain up to date that I hope to instill in my students.Nick specialises in our school cookery programs.
Craig began his cooking career when he moved up to Brisbane from N.S.W with his wife wife Belinda.
16 years ago, Craig gained a lot of experience Cheffing in clubs, hotels and restaraunts mainly in the Redlands and Bayside area.Then Craig took a short break from cooking where he worked as Butcher for 3 years.After 3 years of early starts returned to hospitality 3 years ago, qaulified as a trainer and assessor and have been teaching apprentices with one of Brisbanes biggest RTO's, since coming full time with H4hospitality.
Bernadette is from Hungary ,from a teaching background she in the hospitality industry 18 years ago
She has owned and operated a restaurant in Melbourne, managed a cafe at David jones , also managed a cafe in Brisbane.
Bernadette has gained vast hospitality experience, being the Barista trainer for one of Queenslands biggest Coffee wholesalers, as well as being activly involved in developing hospitality courses in the VET sector.
